Beetroot Salad

Summer represents the outward expression of energy, expansiveness, movement and activity. It is the most yang of the seasons and is ruled by fire. Summer in TCM is the season associated with the heart and the small intestine. The color is red, the emotion joy, and it is a time for growth, expansion, light, abundance and is the manifestation of all we have been cultivating throughout the spring.

Summer is the perfect season for cooling salads that can clear heat, remove toxins and help to generate the fluids of our body. For June we suggest beetroot salad that can perfectly be a meal on its own or add some color and wellness on your summer menu.

Nutritious information

making beetroot saladBeets, (Beta vulgaris L) also called beetroot, have been consumed since the days of Ancient Greece and Ancient Rome.  They are a great source of folate, potassium, manganese, also rich in vitamin A, vitamin C and iron Their dark red-purple color comes from the pigment, betacyanin, which has anticarcinogenic and antimutagenic properties. Their nature is cool and they can contribute to overall good health.

 

 

 

You will need:

  • 8 medium size steamed or boiled beetroots (chopped in small pieces )
  • 2 cloves of garlic grated or fine chopped
  • A full hand of parsley (fine chopped) or fresh rosemary
  • A full hand of walnuts
  • 2 big spoons mustard or Greek yoghurt
  • Olive oil
  • Apple cider vinegar
  • Salt , pepper

 

Mix all ingredients in a bowl , stir well with love and let the salad to rest in the fridge for about an hour.  You can spread some more parsley and walnuts to decorate your plate and make sure you bless your food with gratitude before you ENJOY!!!!!!
